When I was a kid, both of my parents worked full time, and this was an easy dinner that I loved. My Dad taught me how to cook this meal when I was ten years old. I first shared this recipe on facebook during the pandemic in 2020 while we were social distancing and stuck at home. It had a viral response of 5 million views! Here's the recipe:
A box of linguine
4 eggs
4 cloves of garlic (chopped) or a spoonful of minced jarred garlic
olive oil
parmesan cheese
crushed red pepper
salt and pepper to taste
Cook the linguine al dente in a pot of salted boiling water then drain and set aside. Take a large frying pan and coat the bottom with olive oil... add the garlic and saute lightly... then add in the pasta and warm... after, mix in the four eggs (scramble into the pasta) add plenty of parmesan (fresh grated tastes the best) but work with what you have! Add salt and pepper to taste and crushed red pepper.... enjoy!! *This works great with leftover pasta and you can always improvise and add in any veggies or even bacon.... kids love this dish and so do adults... the ultimate comfort meal!
